Salmon with Gus' Mom's Marinade
When Gus Edwards, a utility person at Community Servings, was growing up, his mother made this marinated fish often. Gus recommends serving it with rice and sauteed broccoli.
Ingredients
1 cup olive oil 1/2 cup cider vinegar Juice and zest of a whole lemon 1 teaspoon Italian seasoning 2 cloves garlic 2 tablespoons minced onion 1 tablespoon black pepper 1 pound salmon filletsPreparation
Combine the first seven ingredients (olive oil through black pepper) in a zip-lock plastic bag. Add salmon fillets. Refrigerate to marinade for 2 hours.Preheat oven to 325 degrees. Place salmon fillets on a baking sheet. Discard marinade. Bake for 20 minutes or until a thermometer reaches 145 degrees. Serves 2
