Yummy Dandelion Greens

 

Here is a yummy recipe for dandelion greens, a variation on one found in Gary Null's Vegetarian Cooking for Good Health --Shari Friedman, Community Servings' CSA member

Ingredients

4 cups dandelion greens (I just used the whole bunch), cut up
2 T olive oil (though next time I'll just use one)
fresh corn cut from two cobs
1/2 teaspoon salt
1/8 teaspoon black pepper

Preparation

Combine all the ingredients in a large saucepan over medium heat and cook covered for 10 to 15 minutes.
