Summer Fresh Tomato Sauce
1/2 medium onion, diced
1 Tablespoons olive oil
3 cloves garlic, minced
1/4 teaspoon red pepper flakes
1/2 teaspoon honey
1 cup fresh basil leaves
Salt and pepper to taste
1. Cut a small cross mark at the bottom of the tomato.
2. Place in boiling water for 25 seconds.
3. Transfer to an ice water bath and cool for 30 seconds.
4. Peel the tomato, starting from the cross mark.
Preparation of Sauce:
1. Peel tomatoes and discard skins (See tip on front).
2. Dice tomatoes and onions. Mince garlic.
3. Stack basil leaves, roll tightly and cut into small strips.
4. Heat oil in a large saucepan over medium heat. Add onion and cook until the onion is soft, about 8 minutes.
5. Add garlic, tomatoes, red pepper flakes, and honey.
6. Add black pepper to taste. Bring to a boil.
7. Cover, reduce heat and cook 15 minutes or until thickened.
8. Remove sauce from heat and add basil. Salt to taste.
9. Let sauce rest for 10 to 15 minutes before serving.
10. Enjoy! Try with penne, rotini or any of your favorite shapes of pasta!

Tomatoes are available in over 400 varieties with many different shapes and colors. They are rich in antioxidants and vitamins A and C, which may protect you against heart disease and cancer. The main antioxidant in tomatoes, lycopene, provides the rich color of a ripe tomato. Lycopene is better absorbed by the body when fresh tomatoes are cooked with a little oil.
