Baked Balsamic Marinated Tofu

 

Tofu is made from soybeans and is very high in protein. It can be used in place of meat in your meals. Many vegetarians eat tofu in their meals for protein instead of chicken, beef, pork or fish. Tofu alone has very little flavor but can take on the flavor of the sauce, marinade or dressing it is cooked into. Tofu is low in saturated fat. A diet low in saturated fat can help reduce the risk of cancers and other chronic diseases like heart disease and diabetes.

Ingredients

1 pound firm tofu, drained and cut into 1 inches cubes

2 Tablespoon balsamic vinegar

1/4 cup olive oil

Salt and pepper to taste

Preparation

1. Combine all ingredients except tofu in a large bowl and mix

2. Add cut tofu and coat evenly

3. Cover bowl with parchment or wax paper

4. Marinate for at least 4 hours (up to 24 hours) in the refrigerator

5. Preheat oven to 400 degrees

6. Remove tofu from marinade and place evenly on a sheet pan

7. Back for 15 minutes until tofu is crisp on the outside but soft on the inside
