Brown Rice, Lentil, Roasted Red Pepper

 

This recipe is called a salad but it is actually more like a rice or bean side dish. The fresh parsley makes it taste light and fresh like a salad. Brown rice is a good source of fiber. Lentils are a good source of protein from plants. A diet high in fiber, high in plant protein and high in vegetables-just like this dish- can reduce your risk of breast cancer.

Ingredients

1 cup dry brown rice

1.5 cups dry lentils

1/2 of a 12 ounce can of roasted red peppers, diced and save liquid

1 bunch of fresh parsley, chopped

7 Tablespoons apple cider vinegar

5 Tablespoons olive oil

Salt and pepper to taste

Preparation

1. Cook brown rice and lentils separately according to the cooking instructions on their packages

2. Cool and combine in a bowl

3. Dice roasted red pepper and save the liquid

4. Chop parsley

5. Mix red pepper and parsley with rice/lentils

6. Combine red pepper liquid, olive oil and vinegar and whisk

7. Pour liquid ingredients over rice/lentil/red pepper and parley mixture right before serving

8. Serve chilled
