Herb-Rubbed Chicken

 

Fresh herbs boost flavor and can help you use less salt and/or fat in your meals. Eating less fat and salt can help decrease your risk of breast cancer and heart disease. Chicken is also a low fat meat but is still satisfying to eat.

Ingredients

1 pound chicken breasts

1 Tablespoon fresh parsley, chopped fine

1 Tablespoon scallions, chopped fine

1 teaspoon fresh thyme, chopped fine

1 teaspoon fresh sage, chopped fine

1/2 teaspoon fresh mint, chopped fine

1 Tablespoon olive oil

Salt and pepper to taste

Preparation

1. Preheat the oven to 400 degrees

2. Mix all the chopped herbs together with the salt and pepper in a bowl

3. Add the olive oil to the herbs and mix

4. Place the chicken breasts on a sheet pan

5. Rub the herb mixture on top of the breasts

6. Bake for 30 minutes or until the internal temperature of the chicken is 165 degrees using a meat thermometer
