Baked Balsamic Marinated Tofu Tofu is made from soybeans and is very high in protein. It can be used in place of meat in your meals. Many vegetarians eat tofu in their meals for protein instead of chicken, beef, pork or fish. Tofu alone has very little flavor but can take on the flavor of the sauce, marinade or dressing it is cooked into. Tofu is low in saturated fat. A diet low in saturated fat can help reduce the risk of cancers and other chronic diseases like heart disease and diabetes. |

Roasted Carrot, Feta Cheese and Fresh Cilantro Salad This salad is a great side dish with a mixture of flavors and colors. Carrots are orange because of a compound called antioxidants. Antioxidants are the compound in fruits and vegetables that make them colorful. Antioxidants also help protect your body from cancer. Feta cheese is commonly used in Greek dishes and adds a salty flavor to this salad. Cilantro is an herb that is usually used in salsas and guacamole and is common in Asian and Mexican dishes. Cilantro tastes fresh and exotic. |

| Summer Fresh Tomato Sauce Tomatoes are available in over 400 varieties with many different shapes and colors. They are rich in antioxidants and vitamins A and C, which may protect you against heart disease and cancer. The main antioxidant in tomatoes, lycopene, provides the rich color of a ripe tomato. Lycopene is better absorbed by the body when fresh tomatoes are cooked with a little oil. |
